Banana Streusel Muffins

I made these muffins this week because we had some bananas in perfect condition for a good banana recipe, but I didn’t want to just make plain ole banana bread. This recipe makes a perfect grab and go breakfast for ALL ages that is pretty simple and talk about delicious… Actually I made them JUST yesterday and have only 3 left.. Oops.. Braden wont be happy that I gave them away.
For the batter:
2 cups all purpose flour
1 tsp baking soda
1 tsp cinnamon
½ tsp salt
½ cup brown sugar
1 large egg
1 tbsp vanilla extract
5 Tbsp melted butter
2/3 cup of milk
3 large bananas
Streusel Topping:
1 ½ cups all purpose flour
1/3 cup brown sugar
1/3 cup white sugar
¼ tsp salt
½ tsp cinnamon
1 stick melted butter
Preheat oven to 350 degrees Fahrenheit. Combine in a stand mixer (if you don’t have one you can easily mix these by hand also) the flour, baking soda, cinnamon, and salt.
In another bowl, whisk together the egg, brown sugar, vanilla, butter and bananas. Then slowly add the wet mixture into the dry mixture. Last add in the milk and mix.
Line a muffin tin with liner and fill 2/3 of the full with the batter.
In a small bowl for the streusel topping mix together, sugar, cinnamon, salt, and butter until combined. Slowly add in flour until you have a crumbly topping. (If I imagine what we will in heaven one day without gaining 50 lbs , I would easily pick this streusel topping).
Finally top the batter with the crumb topping and bake for 14-16 minutes or until the tops are no longer wet and golden brown. Remove from oven, let cool, EAT!!
This recipe yields about 16 muffins. Make these for your kiddos, a friend, a neighbor, or heck even for yourself!!
